Plenty moist, airy, light, and also flavorful and not too sweet. The golden-color once baked is perfect! The cupcakes did not fall flat and kept their shape. I have made hundreds of cupcake recipes so over the course of a decade. This recipe is a gem. I have made other recipes on this website and all were delicious from muffins, pies, cinnamon rolls, cookies, to loafs. Her cookbook is equally as amazing. You should try it out. She has a gift! Possibly the people having dense results are weighing their ingredients and therefore using too much flour?

These are the best funfetti cupcakes I’ve ever made. The combo of butter and oil whipped up at the beginning keeps things so light and moist. I made my own buttermilk (half a lemon juiced into a jug, topped up with regular whole milk up to 1 1/3 cups) which worked great.

I followed directions and took them out at the 20 min mark to test and they were already too dry. Overall flavor doesn’t seem that great either. I was supposed to bring these to work tomorrow but I’m not going to be able to.

Hi Alexis! You just alternate adding the dry and wet ingredients, so add half the wet, mix, half the dry, mix, half the wet, mix, and the last half of the dry and mix. Apologies for any confusion!
