Hi Katherine! I think as long as you used dowels/cake supports it would be okay! The frosting is definitely lighter so the top cake will probably sink into the frosting on the bottom one a bit but you could just pipe a decorate border or do some fruit around it!

Ooh yes this would be so tasty with any kind of fruit really! You could absolutely do that and just swap out the berry soak for a different jam of whatever fruit you choose!
