I made it GF and you couldn’t tell the difference. It’s soft, almost doughy, and really does taste like a mini cinnamon bun, which I was initially skeptical of. I love cream cheese icing on top but I’m picky about it, so I upped the cream cheese to 2 TBSP and cut the powdered sugar and milk in half, which was just right for me. I found it made a lot of icing. You could probably make a half-batch and have plenty for your cookies, or just go to town with more than a drizzle.

GF tips – Make sure to slightly reduce the flour called for to prevent a dry cookie, as GF all-purpose flours tend to absorb more moisture than regular flours. I’ve heard that when adapting a recipe for GF, you should aim to reduce the flour called for by 10%. I just took out about 1 tbsp. For Canadians, my favourite is the President’s Choice Gluten Free All Purpose Flour, which is a blend of tapicoa starch, potato starch, cellulose, and xantham gum.

the key to a soft, light cookie really depends on the flour blend. I’m not a fan of Bob’s Red Mill or any blend that’s heavy on rice flours

Hi Brisa! I’ve never tried it, but I bet it would be delicious! Some of the liquid will evaporate off in your brown butter so you might want to add a tablespoon of milk if the dough feels dry!
