  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 1 tablespoon lemon zest
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup frozen blueberries
  • 1/4 cup blueberry preserves*
  • 4 ounces white chocolate, roughly chopped

Notes

  1. The preserves pack extra flavor into the cookies, but they can get a little messy if you end up with preserves in the edge of your cookie dough ball! I like to use a round cookie cutter to round the cookies out right when they come out of the oven to help them keep their shape!
