Hi Angela! I wouldn’t go longer than 48 hours in the fridge, but you can freeze the dough if you don’t want to bake them all off right away!

I used a #40 cookie (1 oz) scoop and halved the almond extract. Baked at 9 min but definitely could’ve used one more minute for the perfect crisp to chew ratio. Brought them into work for a birthday and they were a hit! I do think there could be a stronger pistachio flavor but that could’ve been because of how long I roasted the nuts themselves/type I used. They made it into my recipe box and I will definitely make them again!
