for the cookies

  • 3/4 cup unsalted butter, melted
  • 2/3 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons molasses
  • 1 large egg + 1 large egg yolk
  • 1 teaspoons vanilla extract
  • 1 2/3 cup all-purpose flour
  • 1 cup old fashioned oats
  • 3/4 teaspoon baking soda
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

for the icing

  • 1 1/3 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • pinch of salt

Notes

  1. We like to use dark molasses in these because it has a deep, rich flavor. Blackstrap molasses will have a more intense, bitter flavor!
