For The Pie Crust*

  • 1 1/4 cups all purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold, cut into cubes
  • 2 - 3 tablespoons ice cold vodka or water
  • 1 egg, for egg wash
  • coarse sugar

For the Peach Filling

  • 3 large peaches, pitted and cut into thin slices
  • 1/3 cup granulated sugar
  • 1 Tablespoons butter, cut into small pieces
  • 1 Tablespoon all purpose flour
  • pinch of salt
