Question for you – for the pistachio paste, does pistachio butter (that’s been processed with some sugar) work as well ? Or should I stick to pistachio paste that has no additives? The extra faff of separating eggs etc was so worth it, it was light as a feather. Usually I just mix custard, mascarpone & creme fraiche, but this was superb and the pistachio made it perfection.

Oh no! Apologies for any confusion but happy to hear it worked out! The mascarpone gets added to the egg yolk sugar mixture and then mixed in with the egg whites!

For next time – was I supposed to add the mascarpone to my egg yolk and sugar mixture in the stand mixer in step 4 or fold in with everything in step 5? Thanks!!
