Highly recommend!!! It was sensational. My only note is I used what I thought was a standard muffin tin I made 14 muffins, but maybe my measurements were off! Either way, they were fantastic!

Today I added a teaspoon of cinnamon to the dry ingredients and instead of blueberries I soaked 150 grams of sultanas in boiling water for 15 minutes, then drained them well. Wow, they were amazing, I have already been asked to make them again. This really is a fabulous muffin recipe.

Honestly, I have tried 20 different recipes, but no more. This recipe is excellent if you want a truly light, fluffy and flavourful muffin. The first time I tried I had to sub sour cream for the Greek yoghurt and they were great. This time I used the yoghurt and they were “out of the park ” good. I did use a slightly different struesel but the muffins themselves are fantastic even without the struesel I cut the recipe in half and baked them in my Ninja Air fryer. These will be on repeat, they really are a great muffin. I am now going to look at some of your other recipes, thank you.

I’d give this recipe 10 stars if I could. I can get 5 super jumbo muffins or 6 large from this recipe. I’ve added frozen blueberries, frozen strawberries (cut up very small) and white chocolate chips, frozen raspberries and white chocolate chips, and every time they come out great! I love that I can make it in one bowl and that it bakes up beautifully! Thank you for this recipe!
