My mother’s recipe for Key lime pie never included sweet uncondensed milk. Every time I see a recipe for that I have to cringe. My mom’s recipe uses sour cream, heavy cream, instead. Whatever Key lime dessert I make I use her base.
I made your key lime bars and they are incredible. I have to attribute it to not using the Eagle brand milk. I had to let you know how much I enjoyed this recipe. I also want to let you know that I bought your cookbook and I kept it. I own over 300 cookbooks, so for me to keep a cookbook it has to be pretty special due to space for storing them. For anyone reading this post go buy her book, it’s a wonderful book.
You should be very proud of it Sofi. If I wanted to make this recipe in a 9 x 13″ pan, would I double it? Thanks Sofi, for this wonderful recipe.

I used an 8×8 pan so just added an extra 5 mins of bake time and they came out perfectly. Huge hit! Pro tip: make the day before and let set in the fridge overnight. Extra chilling time made them even better!
