  • 2 cups rhubarb, washed and cut into 1/4 inch pieces
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 quart strawberries, washed, hulled, and quartered

for the crumble

  • 1 cup unsalted butter, at room temperature
  • 1 1/4 cups granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • zest of 1/2 orange
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
