I love that you don’t need to use any baking equipment if you choose not to, which makes clean up a breeze! You can bake in a bunt pan to change things up. I made a simple cream cheese icing to dress it up a little. This was a perfect treat after our chicken pot pie dinner! LOVE LOVE LOVE!

My kids couldn’t tell it was gluten free – they usually balk at the gluten free sweets I make, but they loved this. Thanks for a great recipe! It’s my new go-to for pumpkin bread!
