- 3 overripe medium bananas, mashed (about 1 cup)
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 2 large eggs, at room temperature
- 1/2 cup greek yogurt (or sour cream!)
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat the oven to 350ΒΊF. Grease a 9 x 5-inch loaf pan on all sides and set aside.
- In a large bowl, combine the mashed bananas with the melted butter, stirring to combine. Add the brown sugar and granulated sugar and mix to combine. Add the eggs, greek yogurt, and vanilla extract and whisk until fully combined.
- In a separate bowl, combine the flour, baking soda, and salt. Stir to combine. Add the dry ingredients to the bowl with the banana mixture and use a rubber spatula to fold to combine until no streaks of flour remain. Do not over mix!Β
- Scrape the batter into your prepared pan, spreading it into an even layer.
- Bake for 45 to 50 minutes, or until a knife inserted in the center comes out mostly clean. Allow to cool for 15 minutes before removing from loaf pan and serving.
