  • 1 cup apple cider*
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 1/4 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger

for the cinnamon sugar topping

  • 1/3 cup granulated sugar
  • 1 tablespoon ground cinnamon

Notes

  1. The recipe calls for reducing the apple cider down to a 1/2 cup on the stove, but if you don’t have the time for that you can just use a 1/2 up of apple cider–the apple flavor just won’t be quite as intense!
