If summer had a flavor, it would be s’mores. But as much as I love a good campfire s’more, sometimes I want that gooey, melty goodness without the smoke in my eyes or sticky fingers. Enter: S’mores Blondies. These ridiculously tasty bars are the ultimate s’mores-inspired treat—made with a rich brown sugar blondie base packed with graham cracker crumbs, a swirl of gooey marshmallow fluff in the center, and perfectly melty Hershey’s milk chocolate on top.

What ingredients do you need to whip up these perfect summer blondies?

Here’s what you’ll need to bring these gooey blondies to life:

  • Unsalted butter – Melted to keep the blondies soft and chewy
  • Brown sugar – Deepens the flavor and gives that signature caramelized richness
  • Eggs + egg yolk – For moisture and richness
  • Vanilla extract – Always
  • All-purpose flour – The perfect base for sturdy but soft blondies
  • Crushed graham crackers – Adds that classic s’mores texture
  • Marshmallow fluff – Way easier than real marshmallows and gets that gooey center just right
  • Hershey’s milk chocolate bars – Because nothing says s’mores like those iconic rectangles

Pro tip: Use the full-size Hershey’s bars for that classic look on top. You can break them into squares and gently press them into the top of the batter before baking.

Even after we were done testing these, we made a few extra batches because they’re seriously that tasty. Here are all of our insiders tricks to ensure you get the best s’mores blondies possible:

  • Don’t overbake them! You want the edges set and the center just slightly underdone. They’ll continue to firm up as they cool.
  • Let them cool completely before slicing. The marshmallow layer needs time to set or it’ll ooze everywhere (which, okay, still delicious—but not as pretty).
  • Line your pan with parchment. Fluff can be STICKY. For easy removal line your pan on all sides with parchment paper to make your life (and clean up) easier.

How to Store S’mores Blondies

Dare I say that these blondies actually taste even better the next day once the flavors have settled? I do. As long as you store these properly they’ll stay just as tasty for days to come. Here’s how to store them:

  • At room temperature: Store in an airtight container for up to 3 days
  • In the fridge: If it’s hot out, you can refrigerate them. Let come to room temp before serving for best texture
  • Freezer friendly: Wrap tightly in plastic and freeze for up to 2 months. Defrost overnight on the counter. These truly are the perfect backyard barbecue dessert so I love to have a stash of them to bring in a pinch! They’re the kind of dessert that disappears fast, so maybe make a double batch if you’re feeding a crowd.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 1 large egg at room temperature
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup graham cracker crumbs
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • pinch of cinnamon (optional)
  • 1 1/2 cups marshmallow fluff
  • 4.4 oz Hershey’s or 1 XL size bar, broken into pieces

Instructions

    1. Preheat the oven to 350°F. Line a 8 x 8-inch square baking pan with parchment paper on all sides. Set aside.
    2. In a large mixing bowl, whisk together the melted butter and brown sugar until combined. Whisk in the egg and vanilla and mix until glossy and smooth.
    3. Add the flour, graham cracker crumbs, baking powder, salt and cinnamon if using. Use a silicone spatula to fold the batter until combined and no streaks of flour remain.
    4. Transfer half of the batter into the prepared pan, using a silicone spatula or your fingers to push it evenly to the edges. The layer will be thin, but this is correct! 
    5. Spread the fluff all over the bottom layer, using a greased silicone spatula to push it into an even layer. Form balls with the remaining blondie dough, pressing it between your palms into flat discs and placing all over the top of the fluff to almost completely cover it. It’s okay if there are a few small holes poking through. Gently press the Hershey chocolate pieces into the top of the blondies.
    6. Bake until the blondies are golden brown and feel firm to the touch, 20 to 25 minutes. Place the pan on a cooling rack and allow the blondies to cool slightly in the pan before removing and slicing!

  2. I made these yesterday and they were a HUGE hit! I used gluten free flour and GF Honey Cinnamon Nut thins in place of graham crackers and it worked great. My husband liked them so much I just made them AGAIN today. As usual, amazing recipe.
